4E Organic Farm's more unusual offerings have been flying under the radar but we're betting that will soon change. Curious shoppers who have investigated their table have been rewarded with local ginger and turmeric, broccoli rabe, and recently, komatsuna. Komatsuna is often referred to as "Japanese mustard spinach" though it comes from the brassica family and is not a spinach at all. The taste is more akin to mild cabbage and makes a nice addition to any salad and especially when dressed with MOMO's yuku dressing.
Did you know we have locally-grown mushrooms at the Market? You might not think to look for them at Letterbox Farm Collective's table but, in addition to their beautiful pastured pork, they offer brown bags of shiitakes and oyster mushrooms. They're grown indoors on Dog Wood Farm in Old Chatham, NY and derive their name from the subterranean grow rooms where they are cultivated. Mushrooms are a great ingredient to incorporate into your repertoire, especially if you're moving towards a more plant-based diet.

Dr. Pickle isn't just pickles! They have many varieties of olives, roasted peppers, and other pickled produce. Add olives to your favorite salad OR PASTA!
We are thrilled to share some very exciting news:
The Adam and Zoya Team at Compass has recently partnered with the Market to provide apples and egg donations to the food pantry. As Hastings residents and Market shoppers, Adam and Zoya have witnessed first-hand the impact these donations have on our farmers and local community. By purchasing local eggs and fruit from The Orchards of Concklin, we are able to supply the Hastings Food Pantry with local food to feed local families. Thanks to the Adam and Zoya Team, we can now continue this program through June.
If you too would like to support our work with the local food pantry, you can drop off donations of produce, meat, or cash at the Market table this week. All donations are brought downstairs to the food pantry at the end of the Market and help feed our neighbors in need.
