Spring is Knocking!
Have you noticed? Minute by minute, the sun shines a bit longer each day. Crocuses, those reliable harbingers of spring, are riotous in my front yard. Could we truly be sneaking up on Daylight Savings Time already?
Our friends at Obercreek Farm are easing into the swing of the spring season, filling more and more benches in their propagation house with full seed trays and the bright greenery of the first tomatoes and basil. Here's what they're bringing to market this week: lettuce mix, arugula, Hot Shot, spinach, Siberian kale, beets, lots of turnips, and many varieties of radish. What to do with all the winter greens? Make a dish similar to shakshuka, but greens-based. This easy skillet greens with runny eggs, peas, and pancetta is a vegetable-packed meal that's perfect for any time of day. if you're cooking for a vegetarian, simply skip the pancetta. Pick up rich, yokey eggs from R & M Farm and a rosemary focaccia from Wave Hill Breads and dinner is done!
Because the folks at Four Wall Farm were feeling under the weather, they had to miss our last market. Never fear, they'll be back this week, bringing fresh Oysters, Trumpets, and Lion's Mane mushrooms, along with a mushroom risotto mix and a dried mushroom medley. Try this Creamy Mushroom Pasta with your favorite La Trafila Pasta. Or swap in some organic farro from River Valley Community Grains, we won't judge!
This Lemony Cod and Potato Stew just may become a bright and healthy weeknight favorite. Find your succulent cod at Pura Vida, sturdy potatoes at Sun Sprout Farm, and grassy olive oil at Agape Premium EVOO.
