There’s No Place Like Hastings
I don’t need to tell you that Hastings-on-Hudson is a very special place. Every Saturday, in every kind of weather, Hastings shoppers show up, shopping lists in hand, empty reusable bags looped over their wrists, smiling and saying hello, ready to support our local vendors. But I AM going to tell you, because I am not a resident of Hastings and I can do so without bragging (horrors!). You know all that good that you do? Donating to the market so that local families in need can get farm-fresh eggs and produce? Well, if possible, you’re doing it TOO well. What the people of Hastings donate to the food pantry has outgrown the Community Center refrigerator! What are we going to do about it? We’re going to raise the funds to buy a bigger fridge! With Halloween in our rear-view mirror (which reminds me: thank you to all who donated and picked up Halloween costumes for the kiddos!), you may be leaning toward the savory side of the kitchen. This offers a cozy and multi-layered nutrient-packed treat. You can grab your beets, onions, and greens from your favorite farmer, feta from Painted Goat Farm (milkier and less-salty than other fetas), olive oil from Kontoulis Family Olive Oil, and I’d swap out the orzo for nutty organic farro from River Valley Community Grains.
